About Masseria Trullo

What makes Masseria Trullo different from other olive oils?

Masseria Trullo is 100% crafted in Puglia, Italy, from olives grown in our family groves and neighboring farms our family has worked with for generations.”. Cold-extracted within hours of harvest, our EVOO is rich in naturally occurring polyphenols, full of authentic flavor, never stored in plastic, and carefully protected from grove to bottle to preserve its freshness and character.

Is Masseria Trullo really from Italy?

Yes. Our olives are grown and harvested just outside the city of Monopoli in Puglia, where our oil is milled, filtered, and bottled before making its journey to the United States. Masseria Trullo is Puglian olive oil from grove to bottle.

What are the differences between Masseria Trullo Delicato and Masseria Trullo Robusto?

Delicato is balanced, approachable, and versatile, with a gentler bitterness and gentler peppery finish. It’s an everyday EVOO that works beautifully with fish, chicken, vegetables, salads, pasta, fresh cheese, and more.

Robusto is bolder, greener, and more assertive, with pronounced bitterness and a peppery finish. It stands up beautifully to steak, grilled vegetables, legumes, hearty soups, bitter greens, and anywhere you want the olive oil to make its presence known.

What does “cold extracted” mean?

Cold extraction means the oil is extracted mechanically without excessive heat. Under European standards, the term applies when extraction takes place below 27°C (80.6°F). Keeping temperatures controlled during milling helps preserve the oil’s aromas, flavors, and other naturally occurring compounds.

Is your olive oil filtered?

Yes. We filter our EVOO to remove residual water and olive solids after milling. While cloudy, unfiltered oil can look appealing, those particles can accelerate deterioration. Proper filtration helps preserve the oil’s stability, freshness, and character.

You may see fresh, unfiltered oils - often sold as olio nuovo or novello - celebrated for their intense just-pressed character. These can be exceptional oils, but they’re best enjoyed very soon after harvest and consumed within a few weeks of opening.

How should I store my olive oil?

Keep your EVOO in a cool, dark place away from heat sources, and close the bottle promptly after pouring. Our completely opaque glass bottles help protect the oil from light and preserve its freshness. No need to refrigerate it.

How long does olive oil last?

Check the best-before date on your bottle for its recommended shelf life. Once opened, we recommend enjoying it within 3–6 months for peak freshness. Remember, olive oil is fresh fruit juice: it doesn’t improve while it waits in the pantry. The sooner you use it, the better.

Can I cook with Masseria Trullo EVOO?

Absolutely. EVOO is suitable for the vast majority of home cooking, including sautéing, roasting, baking, pan-searing, and frying.

High-quality extra virgin olive oil has a smoke point around 400°F, depending on the oil and its condition, and its high proportion of monounsaturated fat and naturally occurring antioxidants contribute to its stability during cooking.

So don’t save it just for finishing. Cook with it.

Why don’t you use plastic bottles?

Plastic is bad for the oil, bad for the environment, and bad for you.

Olive oil can absorb compounds from plastic, and plastic packaging can expose food to microplastics. It also does a poorer job of protecting olive oil from light and oxygen, which can accelerate oxidation and shorten its shelf life.

And then there’s the waste: millions of plastic olive oil bottles are sold every year, creating tons of plastic that may never be recycled.

We don’t think something as pure as extra virgin olive oil belongs in plastic. That’s why Masseria Trullo EVOO is bottled in completely opaque glass, protective packaging - never plastic.
